My device self-reports as being Model T8 in places like Windows System Information tool and Win32_ComputerSystem WMI class, but on the physical case top and bottom it says W8 Pro.

Which one should I believe when it comes to installing the right bios, drivers, system image, etc.?

Thank you for the process guidance, but where can I download the latest EC and BIOS for T8? The latest T8 BIOS I have found on the forum is from 2017, and I have not found any EC download for T8.
